Kale microgreens produce thin stems (usually pale green or occasionally purple for Red Russian varieties) topped with small, rounded cotyledon leaves. They lack the curly or dinosaur-skin texture of mature kale — the cotyledon stage looks nothing like the adult plant. Colors range from bright green (curly kale, Dwarf Siberian) to rich purple-green (Red Russian, Scarlet Kale).
